Matcha has traditionally been used in Japanese tea ceremonies for hundreds of years. It is a finely ground powder of specially grown and processed green tea leaves. Special care is taken for the plants (Camellia sinensis) grown for matcha. For example, three weeks before harvesting, the plant is placed in the shade, and when processing the leaves, the stalks, stems and branches are removed.
