Modified Starch (Acetylated Distarch Adipate, E 1422) is a powder with a white, off-white or yellowish color. It has a neutral taste and smell. It is a product of plant origin, usually produced from waxy corn, but can also be obtained from potatoes, tapioca or rice, among others. E1422 is produced by treating starch with acetic acid anhydride and adipic acid anhydride
Because it is a modified starch, E1422 is primarily resistant to retrogradation, i.e. gelatinization. It is also more viscous than native starch and resistant to acidic and alkaline environments. It is also characterized by its stability to freezing and thawing and withstanding storage at low temperatures.
