1. White pepper consists of dried, fully ripe berries from the Piper nigrum vine, with the outer skin (pericarp) removed through water fermentation. 2. Light grey, beige, or off-white; smaller and smoother than black peppercorns. 3. Known for its mild, earthy, musty, and slightly fermented flavor, it is less pungent than black pepper but provides a consistent, sharp heat, making it ideal for white sauces, soups, and light-colored dishes where dark specks are undesirable. 4. Ideal for béchamel sauce, mashed potatoes, clam chowder, Chinese soups, and white gravy. 5. Contains piperine (approx. 3.5-5.0%), which causes the heat, and is often used as a digestive aid. Note: White pepper should be stored in a cool, dry, dark place, ideally in an airtight container to preserve its volatile oils, which degrade 30% faster than black pepper.
